Jason Pettus PhotographyI'm spending the winter making bread for my co-op housemates several times every week, and this time I'm taking the extra step to post photos throughout the entire breadmaking process. (See my timeline for the entire series.) We're 15 minutes away from baking, which means it's time to preheat the Dutch oven the dough will bake in. In most home kitchens, you actually start preheating 30 minutes before baking, by placing your Dutch oven directly on the bottom rack; but our 20-person co-op has an industrial stove usually meant for restaurants, which gets REALLY hot REALLY fast, so I only have to preheat for 15 minutes, and must lift my Dutch oven off the bottom rack or else burn the bottom of my bread.
