#granola

The simplest things are often the very things that make you feel alive 💚

I spent last weekend at a cabin in the woods with my friend Lissy and her golden retriever Morris, having good conversations, making pine needle tea, reading books, hiking long distances, climbing trees, and enjoying the sun. Even though my body ached a bit from all the walking, I couldn’t have been happier. We even found a partial deer skull (it’s on the last slide for those who don’t want to see it)! Going outside truly never gets old 🍃

Edit: nooooo @Pixelfed why have you started cropping photos? Please stahp 🥲

Granola, Enhance

Andrle took a Minimalist Baker granola recipe and modified it a bit; kid and I baked another batch tonight. It will likely be breakfast tomorrow. Tastes great with soy milk!

We skip the coconut flakes (yuck, sorry) and the dry sugar in the mix (MB recipes are always too sweet for our tastes). We always use peanut butter and avocado oil for the coating and pecans and chia seeds for the mix. In addition to the cinnamon, we add 1/2 tsp of Sam’s pumpkin pie spice mix.

Making #museli #granola #breakfast. This has been my regular breakfast for at least 20 years. (Sheesh, that sounds weird to say.)

I'm out of sliced almonds, and sour cherries are my preferred tart ingredient, but otherwise this is my usual mix. I have it with either yogurt (in the jar, my wife makes it in the slow cooker), or oat milk. You can also use hot water and a bit of cream. Or let it soak in the yogurt for awhile.

When I first started making it I used instant oats, but I'm actually fine with the chewy regular oats. The wheat germ adds a really nice nutty flavor.

If you like it sweeter, brown sugar is a nice addition. Or you could use sweetened coconut. It also makes a really great granola if you bake it with some brown sugar, butter, maple syrup, and salt. I'm just usually too lazy. (If you want to do that, I've used this recipe with my mix. cookieandkate.com/healthy-gran)

I don't have a recipe with amounts. It depends on what I have. I just dump it in (bulky stuff first so it mixes easier) and shake it up. That's one of the nice things about it, you can just work with what you have and tweak it as you go.

This January, I’m kicking off a new series: Batch Breakfast! Each week, I’ll share a recipe that allows you to prepare delicious breakfasts in advance, making your mornings stress-free. To start, we’re making this delicious chocolate granola. It requires minimal effort and delivers maximum flavour. Enjoy a week of easy and delicious breakfasts!

Find the written recipe here natliciousfood.com/recipes/cho or comment ‘granola’ and I’ll send it to you!

Life hack: homemade muesli/granola doesn't have to be toasted.
The oats are steamed during the process of becoming rolled oats, so are safe to eat without further cooking, processing, heat-treating etc.

I pour half a 1.5kg bag into a big lidded tupperware bowl, and add some shredded coconut, seeds, nuts, and a bit of dried fruit. Give it a stir, and that's breakfasts sorted for a fortnight.

Scoop 3/4 of a cup into a bowl, add milk, eat with spoon. (The British Dietetic Association suggests a portion size of two to three tablespoons, but to be honest, that sounds more like a garnish than an actual breakfast.)
