Cobwebs in the poundhouse ( apple processing area) . Leave them alone they hold spores of the wild yeasts such as Saccharomyces cerevisiae which ferment the juice. Each pound house has its own unique flora that live there on the cobwebs press cloths etc. Contrary to popular belief only scanty yeats are found on the freshly picked apples. #cider #yeast #poundhouse

I spent the day running experiments with yeast (S. pombe) instead of sitting in front of a computer 😊
I wondered how much yeast (S. cerevisiae) is in this cloudy IPA, looks like way more than I used in my lab today 🤔

Tangy, hoppy, and bitter, lots of precipitation, with 9.0% ABV, but I didn’t feel so much alcohol 🤔

We had their restaurant in our town, but they recently closed it. But I found their beer on the same street 😋

I use dance as a medium for listening better. For me, it is a technology of porosity, contemplation and enchantment. Sometimes, this quality of movement is observed and experienced everywhere: in a protest, in a warm embrace, in the darkness of a nightclub, in the magic of singing together or when a fermentation crock bubbles like a jacuzzi in the kitchen.

Super thrilled to take part to @massiasprout art residency in spring time at dear @massiaofficinale in Estonia. I will spend time with my research project 'Spontaneous fermentation: Collaborating with wild yeasts and revealing Massia's terroir'.
Basically doing some food choreography.

Tomorrow is the deadline, the office staff told me that the NIH grant application system has been a bit unstable, my brain is also a bit unstable because of sleep deprivation, so I made some agar plates to clear my mind, it seemed to help 🤔

While running last-minute experiments to support my proposal, a student in a neighboring lab said he’d never seen me “doing science” before. I'm sure he meant “doing experiments,” but I do feel I'm “doing science” when I'm doing experiments, rather than working (on science) at a computer🤔
