Chocolate Coconut Cake
1 cup unsweetened Coconut
1 cup sugar ( or less)
1 cup flour
3 tbsp cocoa powder
1.5 tsp baking powder
.5 tsp salt
1 cup of milk
1. Preheat oven 350°F. Spray a 8x8 baking pans.
2. In a large bowl, whisk together all the dry ingredients until evenly distributed.
3. Add milk and mix until smooth. Pour in to baking pans.
4. Bake at 350°F for 14-17 mins or until tooth pick pulls clean.
Eat either hot or cooled.
* Instead of frosting, I add a handful of chocolate chips on top when I first take it out of the oven, and spread to a thin layer once melted.

Have not had since they opened years ago, only got because I noticed they had pandan coconut flavor. It's SO good.
Well, I don't drink rum, and I certainly don't drink coconut liqueur, so I didn't know what to expect for the color of the beverage. It is clear.
